Is it possible to map the Outlook 'Home Phone' field with a DNN profile field of the same name?
I'm already sync'ing the 'telephone' field with the Outlook 'Business Phone' field. The 'Home Phone' profile field has already been added to the DNN profile.
 
Basically, I want to be able to store and sync; Business Phone, Home Phone, and Cell Phone with the releveant fields in Outlook (2010)

Sort of.
 
This data is linked into outlook as a second contact list. It is linking the phone data and email address.
 
 You may want something more advanced than this. We use Microsoft Dynamics CRM integrated to DNN.
 

 
Check out the video there on the Tech Ed demo. Might be something more in line with what you are after.

Let me put it another way. Is it possible to add additional mappings of Outlook fields to the 'Mapped Field in Outlook ' list under 'Modify Sync Items'

Outlook limits the fields that can be mapped. For this reason we allow you to map data to the notes field that cannot be directly associated with DNN mappings.
 
This is only going to allow you to feed to outlook. No ability to update from outlook back into DNN.
 
This is a limitation from Microsoft
